In this post, I will tell you the benefits of mushrooms and how they can help you fight disease. I will touch on the extraordinary benefits of beta-glucans and how they can help you in your healing journeys. I forgot to mention this one, and I have no idea why, as it is definitely one of my favorites, and I had a yard full of them at one time. It is the Morel mushroom! These mushrooms are so so good! A little bit about them, and then I will share a recipe, so please stay with me!

While morels can be enjoyed cooked in a variety of dishes, they are also sometimes used in traditional medicine. In Chinese medicine, for example, morel mushrooms are often boiled in water to make a tea that is said to promote overall well-being.

Morel mushrooms can be used to help fight off cancer cells and provide several other benefits. Morels contain a substance called monomethyl auristatin E (MMAE), which is currently being studied for its use in targeted cancer therapies. Also, morels are one of the best sources of Vitamin D (of all of the edible mushrooms) for vegans, which is essential for bone and muscle health, and also an awesome cancer preventer and fighter. Morel mushrooms are high in vitamins, copper, and potassium. They also contain antioxidants and anti-inflammatory compounds, which can help to protect the body against disease.

What is Monomethyl Auristatin E (MMAE)

Beta glucans also help to activate macrophages, which are another type of white blood cell that helps to destroy cancer cells. To increase the vitamin D content of mushrooms, place them out in direct sunlight for 20-30 minutes. In the colder months, you can put them under a UV lamp. You can also buy mushrooms that are fortified with vitamin D. These mushrooms have usually been exposed to UV lights or treated with beta glucans. Beta glucans help us absorb and use vitamin D. If you choose to buy them fortified already, please purchase only organic. It is a wonderful way for vegans to get their vitamin D from food. One recommendation at this point is to supplement vitamin D no matter what you are doing with your mushrooms. Most people are deficient in vitamin D. You also need to be taking high quality and easily absorbable form of vitamin D.

Why Do We Need Vitamin D

Vitamin D is often called the "sunshine vitamin" because our bodies produce it in response to sun exposure. Vitamin D is essential for many health issues, including strong bones, muscular strength, and a healthy immune system. Vitamin D is also associated with a reduced risk of cancer and other chronic diseases. Even though we can get vitamin D from food and supplements, sunlight is still the best way to get our daily dose of this important nutrient. Vitamin D helps our bodies absorb calcium, which is essential for bone health. Vitamin D also plays a role in immune function and cell growth. Exposure to sunlight helps reduce the risk of several types of cancer, including breast cancer, colon cancer, and prostate cancer. Vitamin D has also been linked to a reduced risk of diabetes, heart disease, and multiple sclerosis.

THE BEST COFFEE RECIPE EVER

Any type of LifeBoost Coffee will work. My favorite is their coconut truffle, but I like to change it up a bit, and this is my flavor of the week.

If you need magnesium (and who doesn’t these days?) you can get these tasty magnesium packets and add it to coffee, tea, or smoothies. Or try the magnesium drizzled on top of a pile of fruit. I love to do that.

Ingredients:

1 mug of coffee (I love LifeBoost because it is organic, non-acidic, and there are so many flavors to choose from).

1 tbs of Longevity Mushrooms (tastes like cacao)!

1 packet of L-Threonate Magnesium (Makes for a creamy coffee, so if you miss your cream these are a double bonus).

Instructions:

Mix it all together, and enjoy! I also use mushroom powders in my coffee, when I just want my coffee black. The Longevity Mushrooms and Magnesium give this sort of a chocolate mocha taste. Yummy and very healthy, but they are more of a dessert coffee for me. If you like your coffee black though, you can add these powders from Real Mushrooms, or this blend with 10 different mushrooms is good too.

Stuffed Mushrooms with Turkey Tail

Stuffed Mushrooms with Turkey Tail

1 lb cremini, small portobello, or white button mushrooms (2 8oz packages)

  • Juice from 1 small lemon (or from half a large lemon)

  • 10 oz frozen spinach, thawed

  • 1/2 cup soaked cashews (soaked overnight in water for 6-8 hours)

  • 1/4 cup water

  • 4 garlic cloves

  • 2 TB fresh parsley

  • 1/2 tsp salt

  • Pepper to taste

  • 1 can artichokes, drained and roughly chopped

  • 1 tsp Real Mushrooms Turkey Tail extract powder

Instructions:

  1. Soak your cashews in water 6-8 hours prior to making these. (You can do a quick “hot soak” in warm water for 1 hour if you’re short on time)

  2. Preheat the oven to 375 degrees F.

  3. Clean and de-stem your mushrooms.

  4. Line a baking tray with parchment paper and set your mushrooms on top, with the gills facing up ready to be stuffed. Set aside and make the stuffing.

  5. Drain the water from your cashews. Add the cashews, fresh lemon juice, water, garlic, salt, pepper, and Real Mushrooms Turkey Tail to a blender. Blend on high until smooth – about one minute. Pour cashew sauce into a large mixing bowl and set aside.

  6. Remove excess liquid from the thawed spinach by using a towel or stack of paper towels to squeeze until dry. Add the dried spinach to the mixing bowl with the cashew sauce.

  7. Add your chopped artichoke hearts and parsley to the spinach cashew mixture and stir until combined.

  8. Fill your mushroom caps with the mixture. Don’t overstuff – you’ll most likely have extra stuffing, but it’s so delicious on its own, you can just save to eat later.

  9. Bake for 15 minutes.

  10. Remove from the oven, transfer to a serving platter and enjoy!

Raw Mushroom Soup Blend

Ingredients

3 cups filtered water

3 cups organic mushrooms (any variety)

1 cup organic cashews (soaked overnight)

1 tsp of thyme (fresh if you can find it)

2 tsp of 5 Defenders Mushroom Blend (You can get it here)

1/2 a diced onion

2 cloves of garlic

Pepper and sea salt to taste

Instructions

Add all ingredients, except 1 1/2 cups of mushrooms to a high-powered blender. Some blenders have a “soup” setting. Blend well. Once everything is well blended add the rest of the mushrooms and put the blender on pulse. This will allow you to have a chunkier soup. If you like it creamier you can just add all of the mushrooms in the beginning.

Add some extra mushrooms to the top. If you don’t need this to be a raw soup, you can even add in some sauteed mushrooms.

You can add sliced green onions and/or a sprig of parsley to make it pretty.

Makes about 4 cups of soup.

I Saved the Best for Last

Ingredients

1 cup of cooked buckwheat

6 morel mushrooms

1 spring onion

Onion and garlic from the oleolux (recipe below)

Instructions

Make your buckwheat according to the instructions on the package. If using dried mushrooms, dehydrate according to the instructions on the package too.

Add cooked buckwheat to a bowl. Add the onions and garlic from the oleolux mixture (see recipe below). Chop up your morel mushrooms and your spring onion. Mix altogether. Drizzle the 2 tbs oleolux on the top. If you are using salt then add that now.

1/2 cup cold-pressed flax oil (I get mine here)

1 cup cold-pressed coconut oil

1 Medium Onion

10 cloves garlic slightly mashed

Instructions

Put the flax oil in a covered dish big enough to also add the coconut oil to it. I like to freeze it for the last half an hour before pouring my mixture over it.

Melt the coconut oil in a pan. Slice the onion and cook on low heat until it is transparent (about 10 minutes)

Crush the garlic with the back of a spoon. Add the garlic to the coconut oil and onions.

Remove from heat. Let cool a bit. Take your bowl of flax oil out of the freezer. Put a strainer over the flax oil bowl and pour the onion, garlic, and oil into a colander. Set the garlic and onions aside. Set 2 tbs of the oil aside. Refrigerate the rest of the oil. This can be used in place of butter for savory dishes.

This recipe served me lunch. However, you can add or subtract whichever ingredients you want to make more or less.
